My recipe for this loaf is:
1.5 cups gf starter
3 cups King Arthur GF 1:1 bread flour
6 tbsp whole psyllium husk
2 tbsp honey
4 tbsp olive oil
1.5ish cups of water
Salt
Pumpkin & sunflower seeds
I simply mix together the psyllium husk, water, oil, honey, and starter, then in my kitchen aid add it to the flour. Once the dough comes together, I put it straight into the loaf pan and this loaf proofed covered for approximately 5 hours outside in the humid warm air.
Preheat to 500 Fahrenheit with the 2nd loaf pan (used as a lid) inside, then once ready I sprayed the top of the bread with some water, added the seeds on top, top the loaf with the hot loaf pan lid, reduce heat to 450f and bake for around 40-45 mins. Crusty thick crust, beautiful crumb, stable and soft.
So proud of my first GF loaf!π
Edited to add: I oil the loaf pan with olive oil before putting the dough into it! π

That looks delicious, great job!
Can you show us a slice of it? Iβve made gluten free bread but itβs always dense.
What kind of flour do you use for GF starter?
