Purchased a Weber Premium 22” as a gift for my in laws beach house.. but really just an excuse to finally start my journey down charcoal grilling.

The grill easy to assemble and produced delicious beef hot dogs and grilled corn.

Will be doing NY strips and Wings the next two nights with the Vortex.

    You thought about putting some kind of protective mat under the grill? Just to keep that beautiful deck from getting marked by stray coal embers?

    As a kettle owner, I just did some 24hr dray aged new york strips a couple weeks ago. I would recommend dry aging in the fridge with kosher salt for 6-8 hours and doing a reverse sear. I am not kidding that I made the best steak I ever tasted 2 times in a row experimenting with dry age/reverse seared steaks.
