Did 3 racks of Costco spare ribs with the vortex. Filled the vortex with unlit coals and threw a small chimney of lit coals on top along with some mesquite wood chunks. Turned the lid 90 degrees every 15 minutes. Both vents full open. Finished with 2 different sauces. Stubbs spicy, and bachans Japanese bbq sauce. Total cook was about 2 hours. 10/10. My new favorite way to do ribs. Can I get a whoa Bundy….
