Bought a bag of frozen cod fillets from Walmart. I stuck these two fillets into my air fryer while still completely frozen. Set the air fryer to 370 F for 15 minutes. Halfway through I sprayed the fish with olive oil and put on Kinder’s “The Blend” seasoning, then put back in to finish cooking. Used a digital thermometer to test temp, the thick piece needed 5 more minutes. Both cooked to about 150 F.

Broccoli was blanched, cooked maybe for a little too long, then tossed in a bit of olive oil + garlic powder and salted to taste.

It was DELICIOUS! I’ve never had fish that I liked that wasn’t deep fried, and even then it was iffy. I’ve tried cooking fish before but it never worked out. Now that I really have to lose weight, I’m doing more trial and error cooking and finally found a successful dinner that I absolutely love. It helps that it was comparatively easy too!

I also found out that a good friend of mine eats Mediterranean too. Hopefully she can help me not rely on *just* fish and broccoli lol.
