
We just attempted out first canning. Followed a recipe from one of the books recommended. Thought we removed the air bubbles, measured with the tool and it looked higher than it is. Recipe made 4 jars and the other 3 seem alright. But this one is much lower than it looked when we put it in. After 24 hours it appears to have sealed but looks like it settled lower than we thought yesterday.
Is this safe to eat? Should we toss this one? Is it alright as long as it's sealed, or should we put it in the fridge and eat soon.

Not only do we need the recipe but you need to learn about head space and why it’s important.
Worried about that head space. Also need to know your recipe and process.

Hey, looks like based on your responses and process it was siphoning. It’s safe but the seal might not hold as long so keep an eye on it and plan to use it sooner rather than later.
