Chef offers fresh tastes of Italy through Salmon Arm ‘ghost kitchen’

Chef Arman Khan loves pasta.
His personal favourite pasta dishes include fettuccine al tartufo, with a truffle-infused sauce and mixed mushrooms, and a pasta with pesto rosso. Both of these dishes are available through Khan’s new Salmon Arm business, Pommodorinni.
Khan said he pulled together some of the best dishes from his years of experience in Italian cuisine to create the menu for Pommodorinni, which he operates out of the Zest Commercial Food Hub as a virtual or “ghost” kitchen. Similar to how restaurants operated during the COVID pandemic, a ghost kitchen offers no dining space or storefront. The kitchen is used to prepare fresh meals which can be picked up, or delivered through services like Doordash, Uber Eats and SKIP the Dishes.
“Chef William, he’s the one who encouraged and inspired me to go through this process,” said Khan, referring to Zest facility manager Will Miller.
“We worked with him on trialing his idea as a ghost kitchen,” said Miller. “Its something done a lot in bigger cities.”

To help get the word out about Pommodirrini, Khan has been giving people a taste of culinary talents with a stand at the Downtown Salmon Arm Farmers Market on Saturday mornings.
“At the farmers market, people can see what I’m doing so that when they order, they have that in their mind – that this is what I’ll be doing in my kitchen,” said Khan. “It doesn’t come out of a box or anything. “Freshly cooked, freshly tossed pasta right on your table, that makes a huge difference.”
Formerly a chef in Toronto, Khan moved to Salmon Arm in January of this year to work at Andover Terrace. Having run several kitchens at the same time in the past, Khan wanted to branch out with his own business.
“I thought maybe this town needs something new…,” said Khan, noting Pommodorrini means “something made with tomatoes.”
“It’s authentic Italian food that we are doing in our kitchen… These are the premium dishes, some of the dishes you will find from Northern Italy, some from Southern Italy and some from Central Italy. The chefs I worked with, I combined what were the best they could do… that’s what we have on the menu.”
Khan’s ghost kitchen gets cooking at 3 p.m. and is open to 9, Wednesdays to Sundays. Meals can be ordered through the above-mentioned delivery services or directly for pickup by calling 437-733-4343.
With Pommodirrini, Khan stressed everything is made fresh, with nothing coming from a freezer.
“I strictly believe that is one thing with Italian food… it has to be fresh, fresh and fresh!”
