(I made an original post before I put it in the oven cause I was REALLY scared it would be bad. Twas not.)
Cooked great. Passed toothpick test. Didn’t smell like it was burning. Let it sit. DELICIOUS (swap water->milk, oil->butter, extra yolk, dash of cinnamon espresso and flaky salt).
BUT. How did the hot cocoa mix pan grease & flour hold up? I also expected it to burn a lil, but no, it surpassed all possible expectations.
It’s didn’t burn underneath, it didn’t even burn on the edges. Well it must be a hassle to get off- NOPE IT WIPES OFF THE PAN LIKE DUST.
In the video I cut a portion of the brownie and lifted the edge. THATS IT. I didn’t slice under it at all. I didn’t slice against the edges. It lifted RIGHT OFF THE PAN.
The real magic? That last part of the clip. The bottom of the brownie- ITS PERFECTLY MOIST AND SOFT. No crunchy edges everyone eats around. No soggy bottoms from greasin the pan too much. Plus it ADDS to the chocolate flavor.
I am feel dangerous vilified.

    I’m glad it worked I thought the sugar from the cocoa mix would end up burning. But for me the sad part is no crunchy bits. I’ll eat the entire edge of brownies just for the crunchy haha

    I make an apple cake from a fritter recipe, and use mulled cider spices to dust the pan, but never thought of this for brownies.

    The crunchy edges are hands down the best part of brownies. I thought everyone preferred the edge pieces. You even get special baking pans to get more edge pieces. 

    It looks like this technique stopped the edges from getting crispy. This is blasphemous. Just a terrible idea in my opinion.

    The cocoa mix hack is brilliant, but it’s the dash of cinnamon, espresso, and flaky salt that tells me you know exactly what you’re doing. Espresso makes chocolate absolute perfection

    I’m a little confused. Did you swap flour for cocoa powder or just dust the pan with cocoa before adding the batter to the pan?
