I picked up a notebook that someone hand wrote 10 pages of recipes. Most of it I was able to decipher but there are a few things I could use some help on. I have included a scan of the sixth page and here is the text I got.

Hypocrites

Beat 3 eggs very light with a generous pinch of salt; add 1-1/2 tablespoonfuls of sugar, 1 large tablespoonful of melted butter and sifted flour enough to roll out thin; cut in narrow strips and fry the same as doughnuts; sprinkle while hot with powdered sugar. Very nice served with coffee

Coffee Cake

1/2 cup molasses, 1/2 cup brown sugar, 1/2 cup cold coffee, 2 cups sifted flour, 1/4 cup butter, 2 teaspoons baking powder and 1/2 teaspoonful allspice

Scotch Shortbread

1lb flour, 1/2 pound butter, 1/4 lb sugar fine granulated. Put flour on board, add butter and sugar, and kneed with hand until a nice dough is formed. Roll into round cake any thickness desired and bake in a moderate oven about 1/2 hour or until nicely browned. Cut into shapes while hot

  1. Looks like you translated them fine, but that shortbread recipe looks horrible!

    Too much flour compared to butter. Shortbread is typically 3, 2, 1.. flour fat sugar. this is closer to 4, 2, 1
    Kneading is going to develop gluten and make it tough instead of tender.
    It needs salt.
