


Underbaked 💔 I was so excited to try this too, it smelled amazing in the oven.
Recipe said to bake at 160°C fan for 25-30+min, I ended up baking at this temp for 2.5hrs until skewer came out clean! I used the same baking tray size and weighed the ingredients in grams. I let it cool in the tin and refrigerated overnight. The moment I cut the brownie the centre oozed out. No idea how the skewer came out clean in multiple places when the whole centre was wet 😂
I’m unsure why the centre is wet after 2.5hrs of baking. I have two oven thermometers so I was baking at the correct recommended temp. Am I silly and this is just a very gooey fudgy brownie lol?
In the recipe it said to whisk the egg and caster sugar together until doubled in volume. This made me think twice as I do this for cupcakes to make them light and fluffy… but I decided to follow the recipe anyway. Is this where I went wrong? I’ve never read a brownie recipe that calls for aerating the eggs until doubled in volume as that is usually for a more springy spongy fluffy cake texture to my knowledge?

Looks perfect to me. Fresh out the oven with scoop of ice cream on top 🤌🤌 especially with that underbaked part..oh my gawwd 🤤🤤🤤
You could probably still eat it.
It looks really good, minus the underbaked part lol. Maybe next time raise the temp 20 C to 180. I typically do brownies at 180 from 45-60 minutes, but if it has more liquid content it could be longer. Did you leave it in the fridge to set? I looked at the recipe and it mentioned setting times, which is the only thing I can think of for how they’d appear underbake.
2.5 hours in a 160°C/350°F oven should have burned it black as coal.
Do you have a thermometer in your oven to ensure that it’s getting up to the temperature you’re setting it at?
I didn’t look at the recipe to see if it’s just a bad recipe, which it may well be. But even a bad recipe should’ve been burned to a crisp at 2.5 HOURS in a hot oven.
Since so much of it is baked, I’d probably scoop the liquid batter into a cup and microwave it and eat the rest. Maybe pop the baked section back into the over for a minute or two if you’re squeamish about the brownie parts that touched the raw batter.

You do it if you want a more cake like brownie.
How often were you opening the oven to check, and did you leave it open while you check with your skewer? It may have lost moste heat each time than you thought. That’s still a wild amount of time. Is it possible you added more wet ingredients than you thought on accident?
Id pop the raw part in the microwave to finish cooking it and eat the whole thing lol

30 minutes is crazy. Even when I’m not adding, like, a nut butter which increases the fat and liquid so much, I always had to bake for at least 45-50 just to get the center to set.
Call me crazy, but I’d still eat the F out of these 🤣
Hey this happened to me too a couple months ago! It turns out it was because I used plant-based butter as what I thought was a harmless replacement.
Also, a lot of the reviews on the website mention that the recipe was very gooey. I suspect it could be an extra gooey recipe with some sort of failing in the butter.
Any chance your oven display got set to Fahrenheit and it was really at 160 F?
