
The sauce was made with mild Italian sausage, crimini mushrooms, jalapeno passata, white wine and fresh herbs (sage, rosemary, and thyme). Added some half and half towards the end to mellow the sauce a bit. Finished the rigatoni in the sauce, then plated it and garnished the pasta with freshly grated parmesan and ground (toasted) black peppercorns. It was fantastic!
