Mediterranean White Bean Tuna Salad is a fresh, protein-packed salad made with white beans, tuna, avocado, crisp vegetables, and olives tossed in a simple lemon dressing. Perfect for a quick lunch, light dinner, or healthy meal prep.

Ingredients

➡️For the Salad
400 g white beans drained and rinsed, 1 can (14 oz)
150 g tuna drained, (1 can 5 oz)
1 avocado diced
100 g cherry tomatoes halved
1 persian cucumber diced
1 medium red onion thinly sliced
100 g mixed olives
3 tbsp fresh parsley chopped
➡️For the Dressing
3 tbsp extra virgin olive oil
2 tbsp lemon juice
1 tsp Dijon mustard
1 tsp honey
1 garlic clove grated
1 tsp dried oregano
½ tsp red pepper flakes
Salt and black pepper to taste

Instructions

➡️Drain and rinse the white beans. Dice the avocado and cucumber, halve the cherry tomatoes, thinly slice the red onion, and chop the parsley.
➡️In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, garlic, oregano, red pepper flakes, salt, and black pepper until well combined.
➡️Add the white beans, tuna, avocado, cherry tomatoes, cucumber, red onion, olives, and parsley to a large bowl. Pour the dressing evenly over the salad.
➡️ Gently toss until everything is evenly coated with the dressing. Serve immediately or chill for 15 minutes before serving.
