AIKEN — The co-owners of La Scuderia want diners to know what to expect when they visit the new restaurant on the Northside at the intersection of York Street and Hampton Avenue.
The fare served there is “Old World Italian,” Randy Stamm said. “It’s not Americanized Italian. The best way I can describe it to you is this: If you go to Italy, rent a car, start in the south and drive to the north, all the kind of places where you stop and eat will have the kind food that we have — roasted instead of fried with fresh ingredients.”
Added David Meunier: “We don’t have pasta swimming in an ocean of sauce. There is no heaviness in what we’re selling.”
The pasta sauces offered at La Scuderia include pomodoro, bolognese, arrabbiata and vodka.
Gluten free pasta is available on request.
Pizzas are cooked in a wood and gas oven.
“You can taste every layer of our pizza,” Stamm said. “You can taste the dough. You can taste the sauce. You can taste the cheese. And then you can taste whatever toppings are on it. It’s almost a layered flavor.”
The wood gives La Scuderia’s pizzas a “smoky flavor,” according to Meunier.
“It’s a different taste,” he said.
The most expensive pizza, The Ultimate, is made without red sauce and costs $30. The toppings are chili and garlic oil, red onion, dill, crème fraiche, cured or smoked salmon and chives.
With the addition of caviar or truffle shavings, the price rises to $100.
The least expensive option is the $13 Marinara that features tomato sauce, fresh garlic, fresh basil and extra virgin olive oil.
“Generally, we like to send pizza home to go unsliced because it stays crisper that way,” Stamm said. “But we will be happy to slice it if you ask.”
Also on La Scuderia’s menu are a variety of grilled sandwiches (panini), salads, risotto, beef carpaccio and more.
“We want to be a restaurant for everyone,” Stamm said. “We want people, families, everybody to come here.”
