I used the 7-minute score and got my best ear ever.

I love how a slice looks like a bunny

500 grams bread flour

310 grams water

120 grams starter

16 grams fine sea salt

Dissolved starter in water, added flour and salt, mixed thoroughly by hand.

Let rest 1 hour, then 4 sets of coil folds, every 30 minutes.

Bulked on counter for 7-8 hours

Pre-shaped and let rest for 30 minutes, then final shape and into fridge for cold proof for 2.5 days.

Preheated oven to 500 with Challenger oven inside for 30 minutes

Placed bread on parchment paper into Challenger, added 3 ice cubes, covered and into oven.

After 7 minutes removed lid and scored, added lid back, and turned temperature down to 475 for 22 more minutes. After 22 minutes removed lid and baked for an additional 15 at 425.

Let cool for 2 hours before slicing.

    Is a 7/10 minute score truly worth it considering you are for a second time losing oven heat? I tried it once and saw minimal difference. Wondering what others think?

    Why would one even want a piece of bread shaped like that? It’s harder to butter, harder to use for grilled cheese, etc.

    I would be annoyed, personally, if my loaf came out looking like this. I want my slices to be more uniform and this looks pretty lopsided. That’s just personal preference. If you like this OP, more power to ya.

    The ear is all in the angle at which you score it, doesn’t matter when it is scored

    I’m happy that this makes you happy. Personally it’s not my cup of tea and I actually score my loaf straight down to avoid an ear, but I know a lot of people are chasing it and you certainly nailed it!
