A Gilbert local who left Arizona to learn from some of the world’s top pastry chefs is now bringing those skills home, and since he’s come back, he’s been on fire.
Chef Will Porter recently opened Sablé Boulangerie in downtown Gilbert, a French-style bakery drawing long lines and plenty of attention online.
Porter’s journey started in the East Valley before taking him overseas. He studied the art of French pastry in France, worked in Paris, and later crafted desserts at the Burj Al Arab in Dubai.
Now, Porter is back in his hometown, serving French-inspired pastries like croissants, baguettes and pain au chocolat. The bakery uses French flour, French butter and Valrhona chocolate, specially imported to ensure every ounce of each pastry is authentic and delicious.
Porter said he’s grateful to be back home, and is truly laser-focused on precision, technique and quality. Since opening, Sablé Boulangerie has gained national attention from customers across the US and the world. In fact, every single video that he’s posted about the pastry shop has gone viral. Now, every morning, hundreds of people wake up as early as 4 a.m. just to get in line.
For Porter, opening the bakery in Gilbert is a full-circle moment after years spent learning abroad.
Sablé Boulangerie is located at 228 N. Gilbert Road in downtown Gilbert. The bakery is open Wednesday through Sunday, according to its social media pages.
