    I think your phone’s autocorrect might just be trying to tell you something about the quality of your shots

    Also yeah the meme is relatable, happens to me whenever I pull the first shot with new beans. I can never get it dialed in first try.

    I actually got to serve espresso to Giancarlo Esposito recently when he came to the cafe where I work with his family. He said “now that’s strong! Just how I like it” and then did a huge laugh.

    the gus fring espresso lore is so real because he would be that guy who tastes someone else’s shot and immediately finds something wrong with it while his own is somehow perfect every single time. that said the meme hits because dialing in is just a guessing game until suddenly it isn’t, and yeah the first pull with new beans is always going to taste like regret no matter what you do. the grind finer advice is solid though, sour shots are usually the move when you’re starting from scratch with a new batch.
