



My summer favorite.
Bake a pie with mozzarella, ground pepper and olive oil. After baking put on arugula and (salted) diced tomatoes.
Absolute banger
Dough: Biga 65% hydration
200g Flour
90g Water
1,2g Fresh yeast
Let rest in the freezer for 24h
