Did my first brisket last week! Just bought my first house with my gf and decided to throw a party for my friends, as it was also their 30th birthday.

Did a 20lb prime brisket from the butcher, trimmed it, salt, pepper, little paprika and garlic powder, then overnight brining. Started it at 225F the next day for 6 hours, bumped it to 250F, wrapped at 165 after 9 hours and cooked it at 275 until 200 internal (+-3 hours).

Restes in the oven at 150 overnight and served for lunch! Was good, the pointe was amazing, but the flat turned out a bit dry. Overall, very happy for a first!
