Chef notes

Brooklyn’s Coney Island is arguably the birthplace of American hot dogs, but this dog topped with meat sauce, yellow mustard and onions has Midwestern roots. Most likely the Coney dog arrived by way of Greek immigrants in Michigan. This classic Detroit-based sauce is looser than versions found in Flint or Jackson, which are referred to as “dry” (not in a bad way) and typically include beef heart for an extra bang of meaty flavor.
