Chef Josh Dalton’s Mexican-inspired Rosalita now eyes January opening
As he prepares to open Amara, his new Mediterranean restaurant along the Scioto Mile, chef Josh Dalton has given an update on another Downtown restaurant he has in the planning stages.
Rosalita, slated to join three art galleries in a building undergoing renovations near Gay and High streets, will open in January, Dalton told The Dispatch on July 9.

As Columbus Monthly first reported in 2024, Rosalita will reflect Dalton’s take on contemporary Mexican cooking, including easy-drinking, food-friendly cocktails that celebrate tequila, mezcal and the flavors of Mexico. It will be just a few doors away from two of his other restaurants, Veritas and Speck.
Plans for Amara weren’t announced until October 2025, but the riverfront restaurant in a vacant city-owned space has been on a faster track toward opening. It’s replacing Milestone 229, which closed in 2024 after nearly 14 years in business.
Amara opens July 10.
