Decided on ribs last weekend because that's what fiance and my friends wanted at camp. How did I do just based on the pics? It was so good and tender I forgot to take pics of the inside of the meat. 😭. These are sauced btw (last 20 mins of smoking of course)

I used 2 chunks Applewood and 1 chunk of hickory. No wrapping. Smaller ribs on the bottom grates, bigger ones on the top. I took it out based on the bend test.

I'm very new to smoking and I'm a girl btw. My fiance who's a man said he can't be bothered so here I am 🤣

    Looks great. And you liked them which is all that matters. My husband also doesn’t care to do smoking but he’ll sure enjoy the results.

    Color on those is spot on, that deep mahogany bark is exactly what you’re after. Skipping the wrap and trusting the bend test on a first run is solid instinct. The WSM is pretty forgiving once you get the vents dialed in, you’ll be smoking ribs like this every weekend now.

    I do like hot and fast ribs off the WSM. Anything between two and four hours at around 250.

    Don’t forget, you could use the bottom compartment to sear by moving the grate down there

  7. Any clean up tips for the Weber Smokey mountain? I did a pork butt and dealing with the fat drippings in the water pan was a pain. I always seem to get a hole if I line it in foil

    Ribs look great BTW
