There’s a new bakery in downtown Victoria that’s attracting visitors with the smell of fresh butter and warm pastries.
Le Croissant Chaud recently opened its doors at 1315 Broad Street and is owned and operated by French pastry chefs who are dedicated to creating authentic French croissants using traditional techniques passed down through generations.
“That’s why we’re here, to show you the real French croissant,” said Gwendolyne Machet, general manager of Le Croissant Chaud.
“We make it with French butter, so that’s the secret about it, that’s what gives it all the taste, making the difference,” she said.
Every croissant is handcrafted with layers of premium butter and dough folded over and over to make the light, flaky texture that France is famous for.

“So I arrive at 5 a.m., I start by proofing all the pastries, all the croissants, they need to proof for two hours – between two hours and three hours. After that I bake them in the oven, and after I prepare the croissant all day,” said Machet.
“We have the plain one, the classic one, we have the strawberry one, and we have a croissant every month. So every month we do change the flavour,” she added.
Le Croissant Chaud also opens up its kitchens for hands-on baking classes where participants learn traditional French techniques behind making authentic croissants from scratch.
