With edamame, tomatoes, kale, broccoli, cabbage, brussels sprouts, and radicchio. Next time I want to add some avocado and black beans too, but it was really good!

Also please suggest to me any of your favourite toppings for quinoa.

    Well i don’t like plain quinoa 😂

    But!! I use it in a grain mix with barley and buckwheat that i do love i make an epic batch 1/3 of each and freeze in individual portions

    I would have added a lot more edamame

    Usually i also make an epic batch of sauteed mushrooms they go on special sale then i buy a bunch and make a soy sesame garlic onion braised mushrooms situation

    I’m still obsessed with korean banchan and kimchis so i would add some oi muchim (quick cucumber kimchi) or that tomato kimchi i love or whatever else is on hand

    This is basically a salad disguised as a breakfast bowl and I’m into it. I always roast my veggies first because raw brassicas on warm quinoa feels weird to me, but that’s just preference. For toppings, a squeeze of lemon and some nutritional yeast goes a long way, and if you want crunch, toasted pumpkin seeds or slivered almonds are clutch. I started adding a scoop of hummus on top and now I can’t go back, it makes the whole bowl creamier without needing a heavy dressing. Avocado is a great call too, especially if you mash it with a little lime and salt first. Pickled red onions are another easy win, they add a bright tang that cuts through all the earthy grains.
