While I don’t think this is actually the best way to make an egg sandwich, I’m not mad at it. I like my egg to have crust to crust coverage and I can achieve that better without a form.

Not understanding why the toast has to be standing….
So i just do an open faced grilled cheese . Put a lid on top to melt the cheese. Pull it out of pan, cook eggs, put them on one half of bread and top sandwich with other half. Warm it a minute on eack side to crisp it up and scarf down

Frying a good pain au levain bread in a good amount of butter and putting a very runny over easy egg on it is my perfect egg sandwich. A heavy layer of tapatio hot sauce will make it even better.
