

Luckily I have free corkage at this steakhouse, so I brought this 2002 Dominus to celebrate my partners 26th birthday the other night. It was smooth and rich with nice dark berry notes, plus a bit of earthy spice (I think lol). It paired really well with the bone marrow and wagyu.. really just came together nicely. A great celebration.

The pairing sounds wonderful, but I suspect the occasion made it taste even better.
What does snow aged mean? Do they kill the cow via hypothermia?
Snow aging wagyu is actually a real thing, they hang the beef in subzero temps to concentrate flavor and alter the fat profile, so no cows harmed just very very cold
