Sushi Obana has carved a name out for itself as one of the best sushi restaurants in Japan off the back of the craftsmanship of its chef and the relationships with some of Japan’s best suppliers that he has forged.
Yamayuki, the famous tuna broker, earmarks its best tuna for this restaurant and top quality products like Yuriage brand akagai and a friend of mine’s Tai show up here frequently alongside top class Daisen narabi boxes of uni.
I didn’t take dedicated notes during this meal – I just wanted to enjoy my time there so the courses and descriptions are going off solely the photos I took and my memory. This was a nigiri only course and the courses themselves were:
1. Tai, an excellent opener
2. Kinmedai kombujime, it’s kinda rare to have this without the skin it feels nowadays – I really liked it, it came off clean but still displayed a really enjoyable umami
3. Kohada, very fun
4. Ikura gunkan, excellent – this is always so special
5. Akami, very good – if I remember correctly I think this was a newer tuna without a lot of aging
6. Chutoro, excellent
7. Senaka Hagashi, big fan of this – this was truly exceptional
8. Jukusei o-toro, amazing – such a beautiful taste. I love tuna a lot despite what most of these posts might give off and I really liked this as well. I believe this got roughly 2 weeks of aging
9. Sumi-ika, obana-san keeps this thick without additional cuts. Lovely w a beautiful n creamy texture
10. Negitoro gunkan, excellent
11. Sayori, very good
12. Kobashira
13. Sawara zuke, excellent – a light cure that highlighted the beautiful umami of the fish
14. Himokyu nigiri, very fun to have this as nigiri. I thought this was very good. Delicious with every chew
15. Akagai kimo gunkan, very solid – kinda rare to have this it feels. Been a very very long time since I’ve had it
16. Amaebi, this one’s basically chopped up in a pretty old school way. A lot of my favourite places in Tokyo’ll do this but I do think I prefer this version to most of those
17. Ankimo nigiri
18. Kaiware kombujime, refreshing and gently piquant
19. Ni-hama, I’m not gonna lie I don’t remember a lot of ni-hama here but it’s been a long, long time. This was great
20. Kuruma ebi in ebi shoyuzuke, amazing. The sauce these are marinated in has been going on for ages although I forget the exact number of years
21. Yuriage Akagai, very nice
22. Uni parfait as maki, very cute – liked this. Made with bafun uni this go around
23. Top grade Daisen narabi box nigiri, very nice
24. Kaki, solid
25. Kanpyo nigiri, pretty good – I oddly haven’t had this in ages either
26. Anago, solid
27. Tamagoyaki, I liked this – nothing insanely special but enjoyable
28. Pudding with kuromitsu, excellent. I think his wife makes these – love desserts like this
Extras
1. Ikura parfait, delicious. I loved this so much as gauche as it may be
2. Jukusei otoro x2, very nice – slightly prefer the first one
I strongly recommend Sushi Obana if you’re able to make the trek out to Tatebayashi. Many restaurants claim to offer top quality sourcing but Sushi Obana can truly live up to that claim.
