Ingredients
1 kg bell peppers (for stuffing)
200 g medium-fat ground beef
1 large onion
3 cloves garlic
1 level teaspoon salt
2–3 medium tomatoes
A little fresh parsley
1 tablespoon tomato paste
1 teaspoon pepper paste
1 tablespoon butter
½ tea glass vegetable oil
1 teaspoon dried mint
1 teaspoon black pepper
1 teaspoon red pepper flakes
1 tea glass cold water
2 cups Baldo rice
Extra tomatoes for topping
For the Sauce
1 tablespoon tomato paste
½ teaspoon salt
¼ tea glass vegetable oil
2 cups hot water
Instructions
Preparing the Filling
In a large bowl, combine 200 g ground beef, 1 finely chopped onion, 3 finely chopped garlic cloves, and 1 teaspoon salt. Mix well.
Add 2 grated medium tomatoes, some finely chopped parsley, 1 tablespoon tomato paste, 1 teaspoon pepper paste, 1 tablespoon butter, ½ tea glass vegetable oil, 1 teaspoon dried mint, 1 teaspoon red pepper flakes, 1 teaspoon black pepper, and 1 tea glass cold water. Mix again until everything is well combined.
Wash 2 cups of Baldo rice until the water runs clear, then drain well and add it to the filling mixture. Mix thoroughly.
Fill the peppers, leaving about 1 cm (½ inch) of space at the top to allow the rice to expand during cooking. Cover each pepper with a slice of tomato.
Preparing the Sauce
Mix together 1 tablespoon tomato paste, ½ teaspoon salt, ¼ tea glass vegetable oil, and 2 cups hot water.
Pour the sauce over the stuffed peppers. Cook over high heat until it comes to a boil, then reduce to low heat and simmer for about 30 minutes.
Transfer the peppers to a suitablek baking dish and pour the remaining sauce from the pot over them.
Bake in a preheated oven at 200°C (390°F) until the tops are nicely browned.
Perfect consistency, perfect measurements!
