The team will take over the Club Gascon site in Smithfield

Camille, the Borough Market bistro from head chef Elliot Hashtroudi, is opening a second site in Farringdon, moving into the former home of Club Gascon at 57 West Smithfield. Club Gascon was a Smithfield institution in its own right, the Michelin-starred restaurant chef Pascal Aussignac and business partner Vincent Labeyrie opened in 1998 inside a converted Lyon’s Tea House, holding onto its star for 23 consecutive years before closing its doors in March 2026.

Camille’s new sister site will take a different direction to the original’s regional French bistro cooking. According to an Instagram announcement from the team, the new restaurant draws heavily on the grandmother of head chef Elliot Hashtroudi, delving into old regional British and Irish cooking using ingredients from the Isles, with Victorian tradition and regional cuisine at the forefront of the new space. Though we expect it will still have a zero waste philosophy with a big focus on offal.
