Mung bean omelettes are a ripper. I chuck in a bit of turmeric and black salt and it gets that proper eggy taste. Don’t skip the resting time for the batter or it’ll be gluggy, and the texture is spot on if you get the pan hot enough. My non-vegan mates couldn’t tell the difference last time.
