The bar on North Wells Street always features a sauce of the month.

And you won’t find jumbo wings there. There’s a reason for that.

Nahuel Rodríguez with Big Onion Hospitality joined the show Thursday to talk more about it.

He made key lime guava BBQ wings.

Recipe

Yield: 1 quart (4 cups)

Ingredients
– 2 cups guava puree
– 1 cup orange juice
– 1 cup ketchup
– 1/2 cup red wine vinegar
– 1/4 cup fresh lime juice
– 1 tbsp. Worcestershire sauce
– 1 tsp. Dijon mustard
– 1/4 cup brown sugar
– 1/4 cup BBQ sauce
– 2 tsp. paprika
– 1 tsp. kosher salt
– 1 tsp. black pepper
– 1/2 tsp. garlic powder
– 1/2 tsp. onion powder
– 1/4 tsp. cayenne pepper
– 1/2 tsp. fresh lime zest

Preparation

1. Combine all ingredients except the lime zest in a saucepan.

2. Bring to a gentle simmer over medium heat, whisking until smooth.

3. Reduce heat and simmer 20-25 minutes, stirring occasionally, until slightly thickened.

4. Remove from the heat and stir in the lime zest.

5. Cool completely before using or refrigerating.

Storage: Refrigerate in an airtight container for up to 4 days.

Key Lime Guava BBQ Chicken Wings

Yield: 4 appetizer servings (approximately 16-20 wing pieces)

– 2 lbs. cooked chicken wings (drums & flats)

– 1/4 cup Key Lime Guava BBQ Sauce

– Lime wedges, for garnish (optional)

– Chopped cilantro, for garnish (optional)
