Ordered papusas and papas fritos from a local latin american fusion place and they came with this. I’m usually ok with heat, but I just saw God. It’s more of a sauce than a chunky salsa, pretty acidic, and it’s very dark red definitely not a standard salsa roja. Intrigued and a little scared.

Probably something made with lots of chile de arbol, but kind of impossible to say, It would be a lot easier just to ask them.
Salsa means sauce, btw… The vast majority of salsas aren’t chunky..
Theres a smokey pepper starts with a “A” was it smokey at all and spicy?
It looks like a tlaquepaque salsa, but hard to tell if its very very spicy it may be a charred salsa negra habanero rostizadk salsa.
Maybe they used chipotle in adobo sauce and spiced it up a bit more? Hard to say honestly.
Why so brown?
Was it very smoky? Maybe a chipotle or morita-base?

That looks like roasted tomato/chipotle roja to me. Smoky and spicy?
The acidic part can be from tamarind. Also, tamarind based salasa are usually paired with chile de arbol and moritas. If the salsa is smokey, there may also be chipotle.
If you ask them please follow up! This looks exactly like the sauce at my favorite place! They call it “chipotle” but it doesn’t take like any chipotle anything I have ever had. I dream about this stuff. The amazing folks at my place won’t tell me the “secret” lol
Possibly pasilla chiles as well….to hard to tell.
