





Here we go again!
My wife bought me a Traeger 34 Pro series pellet smoker for Father’s Day and I’ve have been obsessed ever since. I haven’t stopped trying to smoke everything I can to see if it can taste better.
Follow me on this journey until Traeger sends me something or my wife leaves me.
Recipe:
Pickle Poppers
Total cook time: 70-75 minutes
Traeger Hickory Pellets
Traeger set to 250F
Ingredients:
4 Large dill pickles
4 slices bacon
4 Mozzarella sticks
2Tbsp Ribertarian The Butt Bill (BBQ rub)
Tools:
DeWalt drill (any brand should work)
3/8 drill bit
Toothpicks
Recipe:
Preheat Traeger to 250. Dry off 4 pickles and take your 3/8 drill bit and carve out the pickle. Be careful not to pierce through the skin or your fingers. Twist mozzarella sticks into pickle cavity. Wrap in bacon and secure with toothpicks. Place on Traeger and smoke for 45 minutes. Flip pickles and turn heat to high. Once bacon has crisped up pull off and enjoy immediately (30 minutes).
Smoke level: 6/10
Taste: 8/10
Flavor profile: Hint of smoke, sour with a hit of richness from the bacon and mozzarella. Seasoning paired well and gave a nice black pepper forward and slightly sweet taste throughout.
I am fighting the dreaded LER error after cleaning the rod and pot. It pops up after I go from a low temp to high. More to come hopefully as I reach out to the Traeger support as this is now requiring me to sit in front of the Traeger and is negatively affecting my alcohol stock. Although, I came up with idea for the next smoke as I was drinking my Eagle Rare old fashioned.

Lol is that a drill? This is hilariously creative for pickle poppers.
Try a brisket queso, we do it about once a month. It’s amazing. 1 block of velveeta, a pound of brisket, one can of rotel and whatever other cheeses and jalepenos you want. Block it, throw in a foil pan. Add a cup or two of milk. Throw it on at 250 and let er cook. Should start melting after about 30-45 mins then mix it up about every 30 mins or so. If you don’t have brisket then brown some breakfast sausage and substitute that. If it looks like it’s starting to dry out add more milk. Smoked Gouda is also a great ingredient.
Starting to look as if there’s been some budget cuts, and Traeger is winning.
