1. Why are the legs the furthest away from the heat source? As they require getting to a higher temp?
2. What is the point in trussing the birds if the legs and wings arent tied to the bodies?

Honest question that I wish you can answer. From a strictly cooking standpoint, did it taste truly different than just putting it on the grate?
Excluding your rub, seasoning etc.
How would you express the difference in taste. Completely different product or just more juicy?
