First time making this and I am just in LOVE with the colour of it turned out after frying!

This is interesting. You can just fry ripe plantains in a neutral tasting oil for a sweet treat or a side dish to go with a meal. If you want something more doughy you can look up a recipe for banana fritters and substitute the ripe bananas for ripe plantains.
