These Lebanese Stuffed Vine Leaves (Warak Enab) are filled with a fragrant mixture of lamb, rice and baharat, then gently simmered over lamb chops, tomatoes and garlic until beautifully tender. As they slowly cook, the rich tomato and lemon cooking liquor infuses every vine leaf with incredible flavour, while the lamb becomes meltingly soft.
This recipe was inspired by a dish I first tasted many years ago when a colleague brought in a large pot that her Lebanese mother-in-law had made. They were unlike any stuffed vine leaves I’d ever eaten, and I’ve wanted to recreate them ever since. After plenty of research and testing, I’m so excited to finally share my version with you.
