A new fast-casual Mediterranean concept has debuted in Fort Worth: Called Gyrova, it’s serving bowls, wraps, and pita pockets with hummus, falafel, and more, now open at 301 Clifford Center Dr. #107, in a small center on the far west side of Fort Worth near Loop 820.

Gyrova is a locally-grown startup from entrepreneur Bǎker Jaber, who previously helped expand the not-dissimilar Stop N Go Gyros, another locally grown chain.

“He wanted to do a Chipotle-style version of Mediterranean,” a spokesperson says.

Jaber told the Fort Worth Star-Telegram that he used his years of experience “to create something more modern while staying true to the flavors and hospitality of Mediterranean cuisine.”

True to Chipotle form, Gyrova has a buffet with ingredients that allows you to create your own custom order, either in a bowl, in a wrap, or in a pita-bread sandwich.

You choose a protein from options that include chicken or beef shawarma, kafta, falafel, and beef or lamb gyro meat; then a dip or spread such as hummus, tzatziki, baba ghanoush, garlic whip, or harissa.

They get their pita bread from a local bakery, but they make their own special bread for their wraps, called saj — an unleavened flatbread in Middle Eastern cuisine that is baked on a metal griddle. At Gyrova, they press and cook it to order on a traditional saj grill, before filling it with your choices and folding it into a wrap.

“It bakes quickly,” their spokesperson says. “We have the dough ready to put it in a dough presser, it takes 15 seconds to prepare.”

Prices range from $9 for a pita sandwich, to $10.50 for a wrap, to $12 for a bowl.

They also have dolmas — grape leaves stuffed with a seasoned rice mixture — plus falafel, French fries, and sodas. They do not serve alcohol.

Expansion is definitely in the works: The west Fort Worth location opened on August 10, but they already have a second location teed up at 8561 N. Beach St. in a former Subway, which they say will open later in August.
