
I’m thinking of using this recipe from “The all new Ball book of canning and preserving” (p.204) but was curious if I could omit the wine. I don’t drink and therefore don’t have wine on hand and won’t buy a bottle just to make this recipe, so if not I will look for other options. Just curious if it’s safe to skip.

Snag a super cheap bottle! I keep a couple of $8.99 Cabernet from Costco on hand for cooking. It adds a ton of flavor to pasta sauce.
I needed some for a pasta dish the other day (I don’t drink either) and I bought a small single serving box which almost looked like a juice box lol
Like everyone else recommended, the personal size bottles are the way to go. I buy a 4 pk of them and just hang onto them until needed.
Besides flavor it also adds needed acid to the recipe, so it’s not skipable unfortunately
I looked on healthy canning because they often list safe substitutions (especially helpful when trying to do low sugar recipes) – their reply to someone asking this is to ask Ball directly. I’m guessing that means there probably isn’t a substitute.

I also don’t drink wine, so I’ll buy a bottle of wine and freeze the rest to use for later recipes like this.
