Making pie in hot weather can be a challenge. For future hot-weather bakes, brief fridge breaks between rolling, lining, and baking can help keep the pastry manageable. Maraş ice cream and caramel sound like a great finish.

My kid has expressed an interest in learning how to do that lattice work on pies. They have become the family pie baker, picking up the torch from my late great aunt and from my mom, (although my mom still bakes pies time to time, too!)
