i can never get the icing to come out smooth and cooperative like i see in videos. my icing will either curl and twist mid-pipe, or melt a little after piping and not give me that crisp fine line look that i want.

I think this may be an issue with the seam of your bag (if using tipless). I tend to get squiggles when I don’t have my seam flattened and pointed upwards

If it’s the former, it looks pretty much perfect to me.

If its curling around its usually from you having to squeeze too hard. Thin the icing a little so that it flows with very little squeeze.

It looks like it needs to be juuuuuuuust slightly thicker consistency with a slightly bigger opening. The curl happens when the tip is too small. If the icing loses its integrity you can try filling your bags with less icing, or mix your icing longer so it really stabilizes.
Edited to add: you clearly have the technique down, getting there with the icing consistency with absolutely get you to where you want to be!
