super soft, pillowy and potato-iee, kneading was a pain (with a lot of fun) though hahaha

150g boiled potato (cut into small cubes, boil for 6mins)
120g milk + 50g melted butter -> blend with the potahtoeee
cool the mixture

main dough:
370g bread flour
70-100g icing/powdered sugar (regular sugar is okay too)
1/2tsp salt (3g)
6g/2tsp instant yeast
80g heavy cream (or 40g + 40g softened butter)
1 egg

mix everything together + the potato mixture -> rest for 15mins
stand mixer: low for 20-30mins (i dont have one 😭)
hand knead/hand mixer: knead 1-2mins -> rest 10-15mins -> repeat this 3-4 rounds, last round do a lot of fold and slap until dough becomes smooth

this dough is sticky and watery but it will be ok trust the process. add a tiny bit of flour midway if its too watery to handle

proof in room temp for 1-2 hours or cold-proof overnight in the fridge (i cold proofed)

after cold proofing: dough doubles, straight out of the fridge -> divide into 8-9 balls, shape however you want. I like to cut the dough like a pizza -> roll each triangle

2nd proof: 30mins (my kitchen ~80F)

360F 15-17mins

    Looks fantastic! Did you find with 70-100g of sugar it was fairly sweet? More or less sweet than a Hawaiian roll?
