“My child… if it doesn’t crunch, it’s not ready!” 😄❤️
Golden and crispy on the outside, soft and herby inside — kolokithokeftedes are one of Greece’s most delicious meze! Made with fresh zucchini, feta and plenty of herbs, they’re even better dipped into a generous bowl of creamy tzatziki. 🇬🇷
🥣 Ingredients
• 500g zucchini, grated
• 150g feta cheese, crumbled
• 2 spring onions, finely chopped
• 1 egg
• 3 tbsp fresh dill, chopped
• 2 tbsp fresh parsley, chopped
• 2 tbsp fresh mint, chopped
• 80–100g plain flour
• Salt and freshly ground black pepper
• Olive oil, for frying
• Tzatziki, to serve
👩🍳 Method
Grate the zucchini, sprinkle lightly with salt and leave for 10–15 minutes.
Squeeze out as much liquid as possible — this is the secret to crispy fritters!
Mix with the feta, spring onions, egg and fresh herbs.
Gradually add the flour until the mixture holds together.
Season with black pepper.
Heat olive oil in a frying pan and spoon in small portions of the mixture.
Flatten gently and fry on both sides until crisp and beautifully golden.
Drain on kitchen paper and serve while hot.
