How is it so tender and juicy without being pink in the middle? Whenever I try to sear ribeye strips for 30 seconds on each side they get tough and chewy…

How does freshii make it's beef taste like this?

This would be a cut of meat that works well for being cooked low and slow rather than something meant more for faster cooking methods like ribeye.

They probably cook it sous-vide and it is probably not an expensive cut either. I recently did 24 hour chuck slabs, 5 pounds 2 inch thick, sous-vide. I slice them into 1/2 inch cubes to add beef into other stuff. Those were some good tender beef I had. Even after microwaving them for 2 minutes for lunch.

Edit: I only salted the slabs of meat for sous-vide. Made pepper masala sauce with the liquid from sous-vide afterward. The meat was pink when I slice them, but darken after slicing and tossed with the pepper masala sauce in a skillet.
