The recipe makes 1000g of dough, enough for one loaf. You can make it smaller.

600g bread or AP flour
8g instant dry yeast
70g sugar (add more for sweeter challah)
12g salt
60g olive oil
250g water

Six strands, three of them covered with sesame.
Divide into 6 strands, 140g each, rolled to 50cm / 20in.
Shape the rest of your dough into a small ball and place it underneath the braid – it gives the loaf a little extra height.
The strand from underneath always crosses over the next one.
First round of weaving: move only the sesame strands.
Second round – move only the plain strands.
After the second rise, brush only the plain strands with egg yolk.
Bake for around 30 minutes at 180°C or 350°F.
