



I'd seen in Chef that the main character marinades the beef in a citrus bath, so thought I'd try it out using my own recipe.
Recipe;
Brown sugar
Himalayan sea salt
Cracked mixed peppercorns
Paprika
Smoked paprika
Kashmiri chilli flakes
3x limes (squeezed)
2x lemons (squeezed)
2x oranges
Cold water
The pork is currently marinating in the fridge, then it's a salt, pepper and sumac rub before grilling. I've not decided on whether I should add brown sugar to the rub or honey. What do you think?

Oh my 🤤 I love sumac, I love lemons, I love ribs. This looks like my next test recipe it sounds divine!
If you are marinating with brown sugar, I would rub with brown sugar. I love me some honey don’t get me wrong, but if the sugar is already in it, I would keep that line of flavour going. PLEASE come back with final photos when you’re done!
