I took over as KM this week for someone who was apparently the laziest human on earth. Here’s me and my best line cook cleaning everything the last guy hadn’t touched in a year. It’s not perfect but it’s progress.

    Okay gang, let me have it if you wish. Because I will take it, I desperately need to do this exact thing to my fryers. But at the same time I keep getting yelled at for getting overtime, or if I don’t get yelled at specifically, I get my hours for the next week or two shorted.

    I want to spend my time getting that extra stuff done but I also don’t want the owners to be upset with me for running up their labor costs.

    What do I do in this situation?

    The best cure to impostor syndrome in a new role is to realise a very big contingent of people are willfully dogshit at their jobs and somehow still keep them. Even scarier is those so dogshit beyond that that they get fired for being too dogshit. No excuse for it to get this bad, if he’s not lazy then he couldn’t spread butter over bread and should stay far away from a kitchen.

    I remember starting out as a dish years ago and watching the other guy basically glance at the dishes and give them to me while still covered in shit and grease like the dishwasher would fix that, like we’re talking below bare minimum effort. I was a rookie and just accepted that but because I did slightly above bare minimum once I started and did my fucking job, they promoted me very quickly into prep.
    Like I get minimum wage minimum effort, but you can fuck up the entire kitchen AND get the other person (Me) into massive shit for “Not doing my job”.

  16. I’m so sorry. I worked at a little mom and pop burger restaurant in highschool and I still hear the owner to this day saying, “I paid for stainless steel, I want to see it”

    Was about to be the last one to clock off out of the kitchen one night and found a massive spill behind one of the coolers. Some kind of sauce and chunks from the S.o.D. had dried and set like concrete due to being right next to the hot vent. I began scraping and cleaning and the GM found me, saw me almost finished and gave a thanks and nod. The next day he called me to ask if I wanted the day off since we had few reservations and the staff were made to pull everything from the walls to deep clean. I called up the homies and got stoned and played games before passing out outside in the sun on my back deck.

    From the bottom of my heart thank you. When I go out to eat, I just try not to think about whether or not the kitchen is clean. At least you can be proud of yours now!

    I took over a kitchen in a pub where I routinely would cook more for staff than customers (the kitchen had to be operating for their liquor license to be valid). When I got there it was the dirtiest kitchen I have worked in. Over a few weeks I focused on cleaning one piece of equipment a day and transformed it into the place our local health inspector would routinely come for lunch. I definitely considered that a pretty big compliment.
