    **Enjoyed over 4 hours. This changed a lot over the course. The nose is bramble, smoke, dark red fruit, dried herbs.**

    The palate transformed a lot over the hours and was initially a little tight with a lot of red fruit, vanilla, clove, and tannin, but really opened up at the end and gave a stunning performance – it unveiled a lovely chalky minerality, lighter cherry red fruits, dark chocolate, rosemary, thyme, and umami.

    2021 is one of the better vintages of this wine I’ve had. Cellar worthy for sure but decant for 4 – 5 hours now and it will be very enjoyable. I am always surprised at how Tig can be so consistently good from vintage to vintage.

    Needless to say it paired excellent with a slow cooked Tuscan-style wild boar ragu and mezze rigatoni. This is one of those pairings that is meant to be.

    That tignanello looks fantastic but I’m currently on day 4 of a clear liquid fast and that pasta has me feeling all kinds of ways.

    Oh man….so young. I have one last 2004 I’ve been holding since release (one other 2004 I drank 15 years ago). I might drink this year or next. Love the wine.

    You do it justice with Pasta al Ragu di Cinghiale, bravo
