1 refrigerated pizza crust or 1 pound pizza dough4 medium apples, peeled, cored and thinly sliced2 tablespoons butter1/3 cup brown sugar1 teaspoon ground cinnamon1/4 teaspoon ground nutmeg1 teaspoon vanilla extract1 tablespoon cornstarch1 tablespoon water
For the crisp topping
3/4 cup all-purpose flour1/2 cup old-fashioned oats1/2 cup packed brown sugar1/2 teaspoon cinnamon6 tablespoons cold butter, cubed

Prepare the pizza crust according to package directions or roll homemade dough into a roughly 12-inch circle on a greased baking sheet or pizza pan.Melt 2 tablespoons butter in a large skillet over medium heat. Add apples, brown sugar, cinnamon and nutmeg. Cook for 5 to 7 minutes, stirring occasionally, until the apples begin to soften.Stir in vanilla. Combine cornstarch and water in a small bowl, then stir into the apples. Cook another minute or two, until the mixture thickens slightly. Remove from heat.Make the crisp topping by combining flour, oats, brown sugar and cinnamon.
