In this recipe, Iβm giving classic beans on toast a delicious Indian-inspired twist with spicy masala, aromatic spices, crispy toast, melted cheese, fresh coriander and green chillies. Itβs quick, comforting, packed with flavour and perfect for breakfast, brunch or even a quick lunch.
Ingredients list
2 tbsp olive oil
1 chopped clove of garlic | 1/2 diced onion | 1 chopped green chilli
1/2 tsp salt | 1/2 tsp turmeric powder | 1/2 tsp coriander powder | 1/2 tsp curry powder | 1 tbsp tomato puree
1 can baked beans | Bhuna everything together
Butter your sourdough bread & toast on pan both sides
Layer the beans on top and place your soft boiled egg on top and cut it open now garnish with fresh coriander & enjoy!

I'm in rural Australia these days and had to learn to cook Indian style for myself or go without. I've been making variations of this simple dish for years with cans of baked beans or canned spaghetti, chickpeas or lentils – I just grill the cheese off to golden crispy at the end and then add the fresh coriander & chilli. I love your vegetarian recipes the most and wish you would show more! I first had north Indian cuisine in Hampshire UK back in the 1980's and been hooked ever since.
