I’m not sure… the only thing from the sea that pairs with Pecorino cheese is mussels (the famous *cozze e pecorino* dish). That is a very distinctive and unique combination… but with sardines, I find the idea quite unusual—it all depends on how the sardines have been prepared. Fish and cheese are the antithesis of good cooking. There are a few very rare exceptions where everything is cooked and treated in a unique way.
I wish I could focus on the taste… but there are thousands of recipes for preparing sardines, so I find it very difficult to make that association.
I could say it’s rubbish… but the sardine is unique, and elsewhere it’s often cooked in different ways. Not to mention the *cacio*… which is a cheese exclusive to Lazio and Rome.
