I love the idea of having freshly baked bread in the morning.

But kneading the dough, waiting for it to rise, shaping it, and baking it all before breakfast isn’t always easy on a busy morning.

So I decided to prepare the dough and shape the bagels the night before, then let them rise slowly in the refrigerator while we slept.

The next morning, all that was left to do was boil and bake them. Within 30 minutes, the kitchen was filled with the comforting smell of bread, and warm, glossy bagels were ready for breakfast.

With just a little preparation the night before, an ordinary morning becomes something to look forward to.

Today, I’m making overnight bagels.

NGREDIENTS
Makes 4 bagels

• Bread flour: 200g (about 1⅔ cups)
• Sugar: 8g (2 tsp)
• Instant dry yeast: 2g (about ⅔ tsp)
• Salt: 2g (about ⅓ tsp)
• Water: 120ml (½ US cup)

For serving
• Cream cheese
• Honey

Bake in a preheated oven at 200°C / 390°F for about 15 minutes.

  4. I made this recipe and the bagels barely puffed in the fridge overnight. Do you let the dough proof at room temperature before putting them in the fridge?
