A new fine-dining option, Casa Pasha, is coming to 6920 N. Rochester Road in Rochester Hills this upcoming fall. The menu mixes Japanese and French cooking methods with steakhouse classics. Diners will find sushi, prime steaks, Wagyu, oysters, and high-end cocktails, with most of the ingredients sourced from Japan and Asia.
One planned dish involves an oyster trio with rice vinegar mignonette, sudachi granita, and watermelon-mint relish. Diners can order a tableside coal-smoked Caesar prepared with fresh wasabi, white shoyu, and nori panko. There’s also a kombu-aged tomahawk cooked over live fire.
“My philosophy at Casa Pasha is to begin with exceptional ingredients and intervene only with purpose,” said executive chef James Henry, according to the Metro Times. “Whether we’re preparing whole fish, sushi or a tomahawk over live-fire, the goal is the same: exceptional sourcing, thoughtful technique and the patience to do it properly.”
Specialties will include Wagyu beef and bluefin tuna for sushi and sashimi dishes. Casa Pasha will release a full menu before they open.
James Henry worked at Olin Bar + Kitchen in downtown Detroit before this. He was also a culinary chef at Fillipa in Shelby Township. Owner Brandon Rubenstein and the chef spent about seven months developing this project. “Casa Pasha is designed for everything from a celebratory dinner to evening cocktails at the bar, with a menu and ambiance that give guests a reason to settle in for the evening and become a regular,” Rubenstein said.
The name fuses “casa,” which means house or home, with “pasha,” an old Ottoman title tied to wealth and power. Rubenstein describes it as a “house of luxury” with dim lighting and opulent colors in the dining room.
Casa Pasha hours will be from 4 p.m. to 11 p.m. Wednesday through Sunday, and guests can make reservations through the Casa Pasha website. This new restaurant sits next to Papa Joe’s grocery store in a plaza that includes Old Detroit Bar and Grille Rochester Hills, Ginza Ramen, and La Collina Ristorante Italiano.
